BREWERY

Our brewery sits at the back of a century-old building that was originally built to house a heavy machinery garage, then to be occupied by a printing press before being transformed into a brewing facility. The space houses a 15bbl brewing system that produces roughly 1850 litre batches at a time, with a couple of tanks that occupy closer to 3700 litres of beer. Our lagers and ales ferment and age anywhere between three and eight weeks on average, in both vertical and horizontal stainless-steel vessels. Some of our rare specialty ales spend several months and even years in second-use barrels with wild microorganisms to create complex and intricate flavours.

Inspired by the hoppy and bitter pale lagers of Northern Germany and brewed with North American flair, our pilsner has established itself as an icon of the Ontario craft beer industry and is highly respected well beyond provincial borders. Crisp, clean, and refreshing.

Vim and Vigor

Brewed with a nod to the West Coast with a subtle dash of New England flavour, Rabble Rouser is a unique IPA that delivers a well-balanced hop attack with flavours of peach, mango, and pine. Dangerously drinkable with a firm but pleasantly bitter finish.

What we refer to as “tent beer” is designed to emulate the medium-strength lagers consumed in copious amounts at Munich’s annual Oktoberfest. Clean and lean, with enough satisfying malt flavours to keep you engaged, this is one of our annual releases that people start asking about months before its release.

Victory Parade

A generous helping of flaked oats give Fortitude a rich, full mouthfeel while a firm dose of bittering hops lend structure to this delicious stout. Expect notes of dark baker’s chocolate, French roast coffee, and oatmeal chocolate chip cookies. Substantial and satisfying.

Inspired by a once-in-a-lifetime trek to the Czech Republic, this lager is brewed entirely with whole Bohemian hop flowers and Moravian barley resulting in a deep golden beer with nuanced hop flavours and an elegant malt profile. Simple and uncomplicated while remaining delicious and engaging.

Grace & Gratitude

Exile hits all the buttons. Brewed with an array of modern processes, our extra pale ale is dry, crisp, and refreshing, with a balanced dose of citrusy and tropical North American hops. It’s moderate strength and high drinkability make this the desert island beer you’ve been looking for all along.

Exile

True farmhouse ales are dry, spicy, fruity, and hoppy. They are also hard to come by. We brew our version of this classic ale with barley, wheat, oats, and rye to emulate the flavours found in some of the classics, then hop it with old world hops for a sense of rusticity. Complex and refreshing.

Valor

In a quest to create the most refreshing beer in the world, we came up with Rhapsody. Lightly soured and fermented as dry as possible, this peach infused ale has a  champagne-like effervescence, is light on the palate, and finishes with delicate tannins from the addition of Japanese Green Tea. Supremely thirst-quenching.

FAQ’S

What types of beer to you brew?

At Tooth and Nail we brew a wide variety of styles (and non-styles). We are inspired by both tradition and innovation, and always try to put an uncompromising stamp of quality on our products. We generally don’t adhere to the latest trend, but rather provide beers of depth, balance, and high quaffability.

What does the name Tooth and Nail mean?

Tooth and Nail is an homage to the earliest craft breweries in North America who at the time, were going up against “The Big Three” breweries of the era. Breweries like Boston Beer, Anchor, and Sierra Nevada (to name a few) had to fight “Tooth and Nail” just to get their beer on a liquor store shelf or on a bar’s tap. Without their vision and integrity, the craft beer scene wouldn’t be what it is today.

Where can I get your beer?

For the time being, our beer is available fresh on draught at our brewpub, and is available to take home from our retail store. You can also find many of our products at the finest beer establishments throughout Ontario.

I love “x” beer, but it’s not available at the moment. When will it be back?

As Tooth and Nail was primarily built to service the brewpub, we have had many brands over the years, all of which wouldn’t have been released if we weren’t proud of them. That said, we have a finite brewing space and cannot possibly make everything available all of the time. Our suggestion is that if you really like something, enjoy it while it’s around!

Do you take reservations for the brewpub?

We do not. First come, first served. If you are planning on coming by with a larger group, please feel free to call 613 695 4677 in advance and we will do our best to accommodate you!

BEER TO GO

Our products are canned and bottled in-house using our own canning and bottling machines. Crafted with care and packaged without compromise, we keep our beer cold and sell it fresh. While we do our best to keep several styles available, shortages do occur and brands do rotate and evolve. While some of our specialty products may change and develop in flavour over time, the vast majority of our beer is brewed to be consumed as fresh as possible.
